DIJON PORK
This delicious, creamy pork dish is so easy to make that it’s sure to become a family favourite! Lean, succulent pork tenderloin, pan-fried with button mushrooms and simmered in a creamy, mustard sauce – it doesn’t get much better than that! The creamy sauce is made using reduced-fat cream cheese to keep the calories low without compromising on flavour.

Ingredients
4 servings
low-calorie cooking spray
1onion
peeled and sliced
1garlic clove
peeled and crushed
575gpork tenderloin
cut into 12 circular slices
200gbutton mushrooms
sliced
300mlchicken stock
1 chicken stock pot dissolved in 300ml boiling water
3 Tbspdijon mustard
½ tspmustard powder
2 Tbspreduced-fat cream cheese
sea salt
freshly ground black pepper
2 Tbspflat-leaf parsley
chopped
Instructions
Step 1
Spray a large frying pan with low- calorie cooking spray and place over a medium heat.

Add the onion and fry for 10-15 minutes, stirring occasionally, until softened and golden.
Step 3
Add the garlic and slices of pork.
Step 4
Seal the pork for 1-2 minutes on each side.
Step 5
Add the mushrooms, stock, Dijon mustard, and mustard powder.
Step 6
Stir and simmer uncovered over a medium heat for 25-30 minutes, until the pork juices run clear.
Step 7
Turn the pork over halfway through cooking.
Step 8
Take the frying pan off the heat and stir in the reduced-fat cream cheese until completely blended.
Step 9
Season to taste.
Step 10
Stir in the flat-leaf parsley and serve immediately.
