Ingredients
4 servings
3chicken leg quarters
divided to drumsticks and thighs
1 ½ cupsbrown basmati rice
2onions
large, cut into rings
2sweet potatoes
medium size, cut into chunks
2potatoes
medium size, cut into chunks
2 cupswater
½ cupolive oil
1 tablespoondate syrup
or honey
1 teaspoonsalt
1 teaspoonground black pepper
1 tablespoonpaprika
Instructions
Marinate the chicken
Step 1
In a bowl, combine ¼ cup of olive oil, paprika, date syrup, salt and black pepper.
Step 2
Add the leg quarters and coat well.
Step 3
Add the potatoes and sweet potatoes and mix.
Arrange the layers
Step 4
Preheat the oven to 355 degrees F. / 180 degrees C.
Step 5
Place the onion rings on the bottom of a sheet pan and drizzle ¼ cup of olive oil.
Step 6
Pour over the rice and create an even layer.
Step 7
Arrange the leg quarters on top of the rice.
Step 8
Add the potatoes and sweet potatoes and carefully pour over the water.
Step 9
Cover with parchment paper and aluminum foil and bake for an hour and 40 minutes.
Step 10
Remove the parchment and foil and bake for another 20 minutes, until the chicken is browning.
