Instructions
Step 1
Preheat the oven to 210°C (Gas mark 6)
Step 2
Put the aubergine, onion and garlic in a large roasting dish, spray well with cooking spray and toss to ensure everything is well coated. Place in the oven to roast for 25 minutes, giving them a shuffle halfway through
Step 3
Remove from the oven, add the tinned tomatoes, balsamic vinegar, basil, oregano, paprika, sugar and some salt and pepper.
Step 4
Sprinkle the crumbled feta and grated cheddar over the top, then return to the oven for another 25-30 minutes, or until the aubergines are tender and the cheese has melted.
Step 5
Serve with your choice of accompaniment
