Shaved Cucumber Salad in a Honey Sesame Dressing
This is a light refreshing side to whet your palate and excite your stomach for further pursuits such as sushi or, better yet, Tuna Tataki (this page). Inspired by the Japanese sunomono salad and what is available in Ontario, these ingredients complement the ribboned cucumber. Dressed in a seasoned vinegar, the result is a very cooling, sweet healthy side that is no doubt a dish for the eyes and very easy to prepare.

Ingredients
2 servings
2 tablespoonsrice vinegar
2 tablespoonsextra virgin olive oil
good-quality
1 tablespoonsesame oil
1 tablespoonhoney
kosher salt
to season
1English cucumber
shaved into thin ribbons
1 tablespoonmix of black and white sesame seeds
2 tablespoonsquick pickled onions
optional
flowers
Edible, like pansies, cilantro flowers, nasturtiums, or chamomiles, for garnish
Instructions
Step 1
In a large mixing bowl, whisk together the vinegar, olive oil, sesame oil, and honey. Season with salt to taste. Submerge the cucumber ribbons in the dressing and let marinate for 15 minutes.
Step 2
Gently plate the cucumber ribbons. Sprinkle with the sesame seeds. Top with the pickled onions and edible flowers, if desired, right before serving.
