Harissa Broccoli and Roasted Corn Couscous

Instructions

Start the corn

Step 1
Preheat the oven to 220°C (430°F) and line a baking tray with tin foil. Drain 1 200g (7.1oz) tin of sweetcorn and shake off any excess water.

Scatter the corn onto the baking tray, drizzle over 2 tbsp of olive oil and season well with salt. Coat the corn in the oil before spreading it over one half of the tray in an even layer.

Get roasting

Step 3
Scoop 2 tbsp of harissa paste into a mixing bowl and add 150g (5.3oz) of crème fraîche. Season with a generous pinch of salt and transfer 4 of the mix to a smaller bowl - this will be for plating up later. Chuck 250g (8.8oz) of broccoli into the larger mixing bowl and coat it in the crème fraîche mix.

Plonk the broccoli onto the tray next to the corn.

Whack the tray into the oven for 10-12 minutes, until the broccoli is just soft through and everything has started to char. Pull it out of the oven when it's done. Wash up your mixing bowl and get on with your couscous while you wait.

Cook your couscous

Step 6
Put a kettle on to boil. Tip 100g (3.5oz) of couscous into your now-clean mixing bowl. Top, tail, then cut 50g (1.8oz) of green beans crosswise into 6. Chuck them into the bowl with the couscous.

Measure the remaining 1 tbsp of olive oil into the bowl, followed by a broth cube and enough boiling water from the kettle to just cover everything.

Give the couscous a mix, cover it with Cling Film and set it aside for 4-6 minutes, until it is soft and all the liquid has been absorbed. Finely chop 15g (0.5oz) of coriander while you wait.

If you're feeling speedy, have a quick clean of any mess you've made along the way.

Plate up

Step 10
Fold the roasted corn and 3/4 of the coriander through the cooked couscous.
Step 11
Spread a large disc of the reserved crème fraîche mix onto each plate, then pile your couscous on top. Plonk half the broccoli on top of each couscous mound, then scatter over your remaining coriander. Serve!
