Step 1
Heat a pan over medium heat with oil. Cook the bell pepper and zucchini until fork tender, about five minutes.
Step 2
Add the tofu, nutritional yeast, garlic powder, paprika, and a pinch of salt. Use the spatula to stir and gently break up the tofu.
Step 3
Cook until the edges are firm and liquid is gone, about 15 minutes. Place scramble onto a plate and enjoy with toast with jam and an apple on the side!
