Classic Banana Bread with Cinnamon Streusel Topping

This is my family’s classic banana bread recipe. I’ve started cooking it in a 9x9 pan instead of a typical bread pan. I’ve found this lowers the cook time and helps the banana bread cook more evenly. The streusel topping is optional, but I’ve found it also helps the bread cook more evenly.

Banana Bread
4bananas
ripe
2eggs
1 cupsugar
⅜ cupoil
2 cupsflour
½ teaspoonbaking soda
1 teaspoonsalt
1 teaspoonbaking powder
¼ cupwalnuts
chopped, optional
Cinnamon Streusel Topping
Instructions
Step 1
Preheat oven to 325F. Prepare a 9x9 pan by lining it with parchment paper.
Step 2
Combine dry ingredients in medium bowl. Set aside.
Step 3
Mash bananas in large bowl. Add eggs, sugar, and oil. Blend together.
Step 4
Add dry ingredients to wet. Stir to combine.
Step 5
Pour batter into prepared pan.
Step 6
Make streusel topping: combine all ingredients together. Use a pastry cutter, fork, or your hands to break up the butter. Once combined, sprinkle on top of banana bread batter.
Step 7
Bake 40-45 minutes, or once a toothpick inserted comes out clean. If top begins to burn before bread is cooked, cover loosely with foil.
