Crazy Meatloaf

Found this recipe in "The Meats Cookbook, A Southern Living Book", 1975 from my Grandmother's collection.

Instructions

Step 1
Cook the mixed vegetables in boiling, salted water for 5 minutes and drain.
Step 2
Melt butter in a skiliet.
Step 3
Add the onion and cook until tender but not brown.
Step 4
Add bread crumbs, parsley, 1/4 teaspoon salt, thyme and 1/4 teaspoon hot sauce.
Step 5
Combine the egg, milk, remaining salt, basil and remaining hot sauce in a mixing bowl.
Step 6
Add 1 cup bread crumb mixture and mix well.
Step 7
Add the ground chuck and mix well.
Step 8
Press 3/4 of the beef mixture over bottom and 3/4 up the sides of a 9 x 5 x 3-inch loaf pan, leaving center hollow.
Step 9
Combine remaining bread crumb mixture with mixed vegetables and cheese and tum into beef mixture in loaf pan.
Step 10
Cover with remaining beef mixture.
Step 11
Bake in 350-degree oven for 1 hour.
Step 12
Let stand for 10 minutes before turning out onto serving platter and serve with cheese sauce, if desired
