3garlic cloves

3 c mginger
piece, peeled
1brown onion
peeled and halved
30golive oil
1 tspgreen curry paste
½ tspchili flakes
optional
150gunsweetened peanut butter
400gcoconut cream
30gtamari
30gstock concentrate
20gmaple syrup
1 tspfine salt
750gWater
350gdried ramen noodles
100gbok choy
50gbroccoli
100gmushrooms
50gsnow peas
50gcapsicum
50glimes
juice only
1 cupcoriander
4spring onions
finely chopped for serving
¼ cuproasted peanuts
for serving
Instructions
Step 1
Place garlic, ginger and onion into TC bowl, chop for 5 sec, speed 5. Scrape down sides.
Step 2
Add oil, curry paste and chilli flakes (if using), saute for 5 mins, 100C, Speed 2.
Step 3
Add peanut butter, coconut cream, tamari, stock concentrate, maple syrup and salt, blend for 10 sec, speed 6
Step 4
Add water, cook for 8 min, 100C, speed 2
Step 5
Meanwhile, cook noodles according to packet instructions
Step 6
Add vegetables and submerge in liquid using spatula. Cook for 5 min, 100C, reverse speed 2
Step 7
Add lime juice and cook for another 2 mins, 100C, reverse speed 2
Step 8
Divide noodles between four serving bowls, pour over peanut and vege sauce and top with herbs and roasted peanuts
