Instructions

Step 1
Preheat oven to 350 degrees.
Step 2
Take roughly 2 - 3 lbs of fresh squash and dice. Place in a large pot and cover with water. Bring to a boil and cook on medium high for roughly 10 minutes or so. Squash is done when it is fork tender. Next, drain the squash in a colander. (I go ahead and start mashing the squash while it's in the colander to help remove excess water).

Place the cooked squash in a large bowl. Add the crackers crumbs, milk, cheese, and the onion. stir well.

Stir in the eggs, salt, pepper, sugar, and butter, and pour into a greased 1-quart casserole dish.
