Step 1
Finely dice olives, garlic and parsley until it nearly forms a paste
Step 2
Mix with a dash of olive oil, red wine vinegar and salt and pepper to taste
Step 3
Assemble the sandwich and toast in a frying pan or griddle until cheese is melted
Step 4
Serve with tomato purée for dipping
