Instructions

Step 1
Chop the basil, garlic and walnuts. Dice the eggplant, tomatoes and mozzarella. Slice the Parmesan
Step 2
Heat the oil in the pan. Leave the heat on high. Add the eggplant and fry for 5min.
Step 3
To a bowl add the eggplant, tomato, mozzarella, garlic, basil and olive oil. Season with salt and pepper. Mix until well combined
Step 4
Spread each side of the bruschetta bread with olive oil. Toast until golden brown.
Step 5
Spread one slice with the basil mayonnaise. Place the Parmesan on top. Then top it with the eggplant mixture.
Step 6
Place the other bread slice on top and enjoy!
