A nice lunch, or snack for burrito lovers! Side note you can add any dressing you like for your meal, I also add avocado ranch with these with as a side sauce!

Ingredients

3 cupscoleslaw mix
1 cupshredded carrots
⅓ cuproasted peanuts
¼ cupfresh cilantro
chopped
2chicken breasts
cooked, chopped or sliced
6tortillas
large
¼ cuphoney
¼ cupolive oil
or vegetable oil
¼ cuppeanut butter
3 tablespoonsunseasoned rice vinegar
1 tablespoonsoy sauce
1 teaspoonsesame oil
½ teaspoonpepper
¼ teaspoonsalt
¼ teaspooncrushed red pepper flakes
1 tablespoonfresh ginger
grated
1garlic clove
large, minced
Instructions
Step 1
In a medium bowl, whisk together the peanut sauce ingredients.
Step 2
In another bowl, add the cabbage, carrots, cilantro, and peanuts. Pour the sauce over the mixture and stir. Let this sit while you prepare the tortillas and chicken.
Step 3
Heat up the tortillas for about 10 seconds in the microwave to make them easier to work with.
Step 4
Divide the chicken and coleslaw between each tortilla
Step 5
Roll tightly, securing with toothpicks if necessary.
