Preheat oven to 425 degrees

Place prepared broccoli, cauliflower, and carrots on a large rimmed sheet pan.

Drizzle the vegetables with olive oil, and season with salt and pepper.

Toss the vegetables to coat in the oil and seasonings.

Spread the vegetables out into a single layer on the pan.

Roast in the oven for 20-30 minutes until cooked and slightly brown, tossing halfway through the cooking time.
Step 7
Remove vegetables from the oven and transfer vegetables to the serving plate.
Step 8
Top the vegetables by sprinkling the garlic herb goat cheese over the top.
Step 9
Top with the arugula and drizzle with balsamic vinegar and enjoy!
