Hamentashen - Parve

This is a very easy parve recipe for Purim. I use numerous fillings; you are limited by your own imagination. Bring the kids in to help and have a blast! I used curds, jams, nuts, seeds, and chocolate.

Instructions

Step 1
In your stand mixer; beat oil and sugar together till well combined
Step 2
Add in eggs, egg yolk, lemon juice & zest and apricot juice.

In a bowl mix together flour, baking powder and salt

Gradually stir in flour mixture until well pulls together into a sticky ball. Wrap in saran wrap and refrigerate 2 hours or overnight.
Step 5
Roll out dough to 1/4" thickness using extra flour if necessary. Using a 3" cookie cutter or glass; cut out and place on lined cookie sheet.

Beat another egg with 1 tbsp water and a pinch of salt; brush around rim of cookie.

Place about 1 1/2 tsp of filling into middle and pinch one side up. Turn and pinch another side and again. You should have a three pointed hat. See picture.
Step 8
Refrigerate the cookies for at least 1 hour to maintain shape before baking.
Step 9
Preheat oven to 375 degrees Fahrenheit.
Step 10
Brush the sides of cookies with egg mixture and sprinkle coarse sugar. Bake for 13 - 15 minutes. Let rest and of course Enjoy!
