Thai-spiced turkey patties with noodle salad

Turkey is incredibly good for you, and its mild flavour means it can take a lot of spicing up. Make these low-fat patties for your family - the kids will love them too.

Step 1
Heat the grill to medium-high. Put the turkey in a food processor and pulse until minced. Add the lemongrass, garlic and lime zest, and half the soy sauce, coriander, chilli, then pulse again until combined. Tip the mix into a bowl and add some black pepper. Shape into eight patties, then transfer to a non-stick baking sheet and grill for 3-4 minutes on each side, until cooked through.
Step 2
Meanwhile, soak the noodles according to the pack instructions, then drain and add the vegetables, the remaining soy sauce and lime juice. Toss well, divide among plates and sprinkle with the remaining coriander and chilli. Serve with turkey patties and some sweet chilli sauce for dipping if you like.
