Step 1
Peel potatoes and boil until cooked through but not mushy. In a skillet heat 1/2 cup of olive oil on medium high heat. Place boiled potatoes in the skillet with the oil and salt and pepper to taste. Continue cooking until potatoes are lightly browned. Add peppers to the same pan and cook until slightly softened. In a small bowl mix 1/4 cup of vinegar and 1/4 cup of red wine. (Cooking wine is fine.) Add 1 teaspoon of cumin and 1 teaspoon of chili powder. Add 1 tablespoon of paprika and 2 tablespoons of minced garlic. Mix well and pour into the pan over the potatoes and peppers to coat. Continue cooking until spices have started to brown on the potatoes. Enjoy!
