Step 1
Preheat your oven to 200. Add the oil to a large oven tray and put in the oven
Baking sheet
Step 2
Add your potatoes into salted boiling water and cook for 5 minutes

Drain potatoes and allow to steam dry
Colander
Step 4
Take the hot tray out of the oven and add in the potatoes. Turn them in the oil to cover all sides and arrange in a single layer. Cook for 15 mins
Baking sheet
Step 5
After 15 mins remove from the oven and sprinkle over herbs and garlic. Move the potatoes again to cover in the mix.
Step 6
Cook for 15 more minutes until golden and crispy
