LEMON PRAWN LINGUINE

I had this pasta for the first time 5 years ago in Amalfi, south of Italy, and I immediately feel in love with it! Remember to let the lemon juice evaporate for a couple of mins for a perfect result!

Instructions
Step 1
In a pan over medium-low heat, drizzle extra virgin olive oil and add garlic cloves. Add your prawns and cook they start to turn pink (2/3 mins).
Step 2
Add the juice of 1 lemon and let everything simmer for 2/3 more minutes, or until the prawns are fully cooked. Stir occasionally.
Step 3
Add heavy cream, the zest of 1 lemon and chopped parsley. Let your sauce simmer for a couple more minutes.
Step 4
In the meantime, boil your linguine until al dente, then add them to your sauce.
Step 5
Toss well over the heat to combine all the flavours together, adding a drop of pasta water to make it sexy!
