Instructions

Step 1
Put lemon juice, zest, sugar and butter into a saucepan and melt on a low heat
Step 2
Whisk in beaten egg (on medium heat) and keep whisking until boiling
Step 3
Whisk for another minute (the mixture will thicken)
Step 4
Pour immediately into sterilised jar
Step 5
Store in fridge
