Instructions
Step 1
Place the chorizo into a frying pan with a splash of oil on medium and cook for 4-5 minutes
Step 2
Add the onion and cook for a minute before adding the red pepper and garlic
Step 3
Cook until fragrant before adding your spices
Step 4
After a minute add the chopped tomatoes and some water if too thick. Cook this for 5 minutes on medium
Step 5
Made 6 holes in the sauces for each of the eggs. Crack gently into the holes and cover the frying pan with a lid. This will poach the eggs in the sauce. For runny yokes it needs no more than 3-4 minutes
Step 6
Top with parsley and serve with toasted bread, flat bread or naan. Enjoy!
