Instructions
Step 1
1. Chop all veggies into bite size pieces
2. Boil potato and carrot and strain
3. Meanwhile, heat olive oil in a large pan and cook sausages before removing and cutting into bite sized pieces and then add garlic and onion and fry until tender
4. Add mushrooms and fry for 5 minutes before adding the rest of the vegetables & sausages 5. Add coconut milk, curry powder and garam masala and simmer for 10 minutes
6. Cook rice according to instructions and serve curry on top of rice
