Instructions
Step 1
Chop the onion and mince the garlic. Add to a pot with some olive oil and cook on medium high for 3 minutes, or until translucent.
Step 2
Add the sausage. Break up with a cooking utensil and mix well. Cook until the sausage is browned.
Step 3
While the sausage is cooking, have a pot of salted water boiling (think of the sea). Add the shells whenever the water is ready and cook according to the instructions on the box.
Step 4
Once the sausage is cooked, add the spinach and cook until wilted. Should take just a couple of minutes. Once done add the peas and thyme.
Step 5
Change cooking temp to low and add the cheese. It's going to seem clumpy but we will fix that in a second. Stir well!
Step 6
At this point the pasta should be done. Take 1-2 cups of the pasta water and slowly pour it over the sausage mixture. Stir well. This will help melt the cheese and create a sauce. Once the sauce is saucy enough for you, add the pasta, mix well, and serve!
