Instructions
Step 1
Sauté bacon in instant pot until almost cooked through.
Step 2
Add butter and allow to melt
Add onions and celery
Once onion has softened, add garlic and sauté for 30sec
Meanwhile, drain clam juice from canned clams into a measuring cup. Add additional clam juice to make 2 cups. (Can also use water, chicken broth, or even 1/2cooking sherry 1/2 water to get up to 2 cups) Add clam juice, bay leaves, and potatoes Place lid on instant pot and cook on manual for 4 minutes
Allow natural release for five minutes then force release
Mash some of the potato, but not all just kinda squish some with a masher. Add in clams and half and half and heat through.
