Instructions

Step 1
Put a skillet on a hob with high heat and drizzle some olive oil. Sauté the onion until tender. Add in the chopped garlic cloves and chicken pieces. Cook the chicken until white (around 3 minutes)

Step 2
Add in the diced bell peppers, quickly mix them together with the chicken. And add the tomato puree, cumin, paprika, all-purpose seasoning, oregano, parsley, salt and pepper. Mix well and cook until the peppers are tender

Boil the pasta in boiling water with 2 tbsp salt for around 10 minutes

For The Bechamel Sauce (White Sauce):

In a saucepan, melt the butter on medium heat, and once melted, add in the flour. Cook for 1-2 minutes - a dough-like paste will form

Gradually pour in the milk whilst stirring consistently. Keep stirring until you have a smooth thick sauce

Add in the salt, pepper and nutmeg

To Assemble:

Drain the pasta. Do not rinse with water as the starches will help the suce adhere with the pasta. Add in the cooked chicken pepper mixture and mix well. Transfer half of this chicken pasta mix to a large baking dish

Spread half of the Bechamel sauce over the pasta in the baking dish and sprinkle with cheese (optional)

Add the rest of the pasta to the baking dish, spread the remaining Bechamel sauce and top with cheese

Bake until golden brown (around 20 minutes) at 200°C / 400°F / gas mark 6
