Instructions
Step 1
Preheat oven to 350°.
Step 2
Spray two 9 x 13 pans, use disposable aluminum pans if freezing half of the recipe.
Step 3
Brown and drain ground beef.
Step 4
Add taco seasoning, green chilies, and refried beans to meat, and cook until warmed through.
Step 5
Pour a small amount of enchilada sauce, just enough to cover the bottom of the baking dish, and spread evenly.
Step 6
Take a tortilla and add some meat mixture and cheese. Roll the tortilla, and place it in the pan. Continue until you have 8 enchiladas in the pan.
Step 7
When pan is full, sprinkle cheese on top, and cover with enchilada sauce.
Step 8
Repeat steps for second pan.
Step 9
Tent with foil, and bake for 30 minutes. Remove foil, and bake another 10 minutes to brown the cheese.
Step 10
I like to serve with a couple dollops of plain Greek yogurt.
