Greek Salad with Chicken

My go to order at a restaurant is normally a Greek Salad with Grilled Chicken, and the addition of roasted red peppers and artichokes makes it even better. This is super healthy, and tastes great with all the vegetables, meat, and feta. This also works well as a side without the meat too. Chicken
2 lbboneless skinless chicken breasts
cut into cutlets
15golive oil
3 tsponion powder
3 tspgarlic powder
3 tsppaprika
2 tspchili powder
1 tspsalt
1 tspthyme
Vegetables
Instructions
Step 1
Cut the chicken into cutlets and pound to even thickness. Add chicken to a bowl with seasonings and oil. Mix. Transfer to a parchment lined cookie sheet. Chill in the fridge for a few hours if desired

Step 2
Bake chicken on a parchment lined sheet for 12-15 minutes at 400F. Set aside
Step 3
Drain and rinse the chickpeas, red peppers, and artichokes. Cut the artichokes, and add all 3 to a large bowl

Step 4
Cut up all the vegetables and add to bowl with the feta

feta cheese4 oz
Step 5
Let chicken rest until all vegetables are cut up. Dice the chicken small, and add to the bowl. Optionally serve with Italian dressing
