Cucumber Salad

Veggies don’t have to be boring! Oi Muchim, or spicy cucumber salad, is a Korean side dish (banchan) that can be prepared in <5 min (or maybe >1 hr if you’re Kendall Jenner). Banchan are a key component in Korean meals. Banchan are side dishes that are served with the main course and are meant to be consumed throughout the meal and replenished as needed. Other examples of banchan include kimchi, spicy radish salad (mu saengchae), seasoned mung bean sprouts (sukju namul), and braised potatoes (gamja jorim). Though it may be difficult to prepare banchan with every meal if you’re not used to doing so, it can be a great way to add a variety of veggies to our meals! For those wondering why I’m cutting my cucumber this way and mentioning Kendall Jenner, just google “Kendall Jenner cucumber” and feel lucky that you (probably) know how to cut a cucumber 😀 Ingredients: - 4 Persian cucumbers - 1 tsp salt - 1/2-1 tbsp gochugaru (Korean chili powder), depending on how spicy you like it - 2 tbsp rice vinegar - 1 tbsp sesame oil - 1 tsp sugar - ~1 tsp minced garlic - ~1 tsp sesame seeds - Green onion Instructions: - Slice 4 cucumbers and sprinkle with ~1 tsp salt. Set aside for 15 min and drain excess water. - Mix together cucumbers, gochugaru, rice vinegar, sesame oil, sugar, garlic, sesame seeds, and green onions.

Step 1
- Slice 4 cucumbers and sprinkle with ~1 tsp salt. Set aside for 15 min and drain excess water.
