Instructions
Step 1
Heat the oil in a large saucepan & sweat the onion for 5 mins. Add the cumin & oregano, then the carrot pepper, celery & mushrooms, & cook for a further 10 mins.
Step 2
Stir in the garlic, chilli, tomatoes, vinegar, chickpeas & black beans. Simmer well until the sauce begins to reduce - around 10 mins.
Step 3
Season well to taste & serve up with a spoonful of full fat Greek yoghurt or raita (see the sauces recipe selection).
