Instructions

Step 1
• Preheat the oven on high broil.
Step 2
• “Sweat” the eggplant for crispness: Slice, salt, and then let the eggplant on paper towels for 20-30 minutes, then wipe off the salt and pat dry

• Brush the eggplant with a little oil then broil it for about 5 minutes til it’s golden

• Meanwhile, slice the cheese and tomatoes

• Then, layer the eggplant, Romesco sauce, cheese and tomatoes in a baking dish. Start with a little oil and sauce and finish with cheese. And sauce.
Step 6
• Bake for 20-25 minutes until the cheese is melted and Golden
Step 7
• Meanwhile cut your basil ribbons. And serve on top
