Instructions
Step 1
Heat olive oil in a large skillet over medium heat. Add onions and cook for 3 minutes until translucent. Add rice and stir until rice is lightly toasted.
Step 2
Stir in broth, salt, and pepper and bring to a boil. Reduce heat to a simmer, cover, and cook for 10 minutes.
Step 3
Stir in peas and carrots, cover, and cook for an additional 10 minutes. Fluff with a fork and serve.
