Step 1
Preheat oven to 375°
Peel and dice sweet potatoes and boil for 5-6 minutes. Dice the rest of the veggies. Add ghee to a oven safe pan and heat for a minute on the stove top then add onions and bell peppers. Sauté for 8 to 10 minutes then add in the sweet potatoes cook for another 3 minutes then add in the garlic and sauté for another minute. You can now add in your seasonings. Make 4 wells for the eggs then add an egg to each well. Season the eggs with a little bit of salt and pepper. Bake at 375° for 6-8 minutes. Top with chives and avocado. Y’all come eat!
