Step 1
Preheat a grill or grill pan to medium high heat. Brush the corn with olive oil and grill, about two minutes per side, rotating until the Colonels on all sides are tender and a few Charmark form, about 10 minutes. Let cool, then slice the Colonels off the cob. Place the corn in a large bowl with the spinach, tomatoes, mozzarella, scallions, and basil. Talked with 1 teaspoon of olive oil, the sherry vinegar, and smoked paprika, if using. Season generously with salt and pepper.
