Instructions
Step 1
In a small mixing bowl, crack open as many fresh eggs as the number of people that you are planning to serve (ex: 4 people eating = 4 eggs) and beat them with a fork until mixed together.
Step 2
Add a touch of salt and 1T of oil to the mixture and stir with a fork.
Step 3
On a clean counter, measure out 2 cups of flour.
Step 4
Create a little well in the middle of your mound of flour.
Step 5
Add your whisked egg mixture.
Step 6
Start to slowly cover the eggs with flour, mixing it into the center with your fork.
Step 7
Begin the kneading process with your hands. The dough is ready when you haven't had to add any more flour for several minutes, is elastic to the touch, and it is smooth! Too much flour = tough dough.

Too dry? Wet your hands. Take it slow.
Step 9
8. Optional: Let the dough rest for 5 minutes if possible.
Step 10
9. Divide the dough into 4 equal dough balls.
Step 11
10. With a rolling pin, Roll each dough ball into a narrow, long shape.
Step 12
11. Place on parchment paper, sprinkle with some flour to avoid sticking to each other, and cover with another piece of parchment paper.
Step 13
Feed each long shape of dough through your pasta maker roller attachment, thinning it out to your desired thickness. Start with level 2, and work your way up to level 4 or 5. You should be able to see through your pasta.
