The EugeFood Mac n Cheese

This is a very unconventional mac n cheese. I myself am lactose intolerant so this recipe cuts out the butter, cream and milk so my stomach doesn't hurt (as much lol). Instead the recipe uses sodium citrate. Considered a molecular gastronomy ingredient but also known as a "sour salt". The sodium citrate allows the cheese to bind together and stay as an emulsion "sauce" even when brought to boiling point. Sodium citrate can be bought off amazon. Dm me on IG for the link to that.

Instructions

Step 1
Cook off your bacon how you normally would. I love to bake mine in the oven for a more consistent cook. Save the bacon fat; for anything else.
Step 2
Bring a pot of salted water up to a boil for the pasta.
Step 3
Scale out your cheese and grate. Measure out your garlic powder, onion powder and paprika. Including the 500ml of water.
Step 4
Once all other ingrdients are prepped (including the bacon). Drop the pasta into the water. In a seperate pot add the 500ml of water and bring to a simmer, not a boil.
Step 5
When the water is simmering add the sodium citrate and whisk that in. Now you are going to add the grated cheese in batches. Every time make sure the previous batch has dissolved completely before adding the next batch. This will look and be a little weird but trust me it will be fine once all the cheese has been incorporated.
Step 6
Add in your mustard and then the dry ingredients.
Step 7
Now your pasta should be about ready, add all the pasta into the cheese sauce pot and stir in the bacon. Now it should be looking like a mac n cheese.
Step 8
You might notice the cheese sauce is a little bit "liquidey". Give it a little time to hang out with the pasta; the starches from the pasta are going to help give the sauce it's finishing sheen.
Step 9
Now pour into a baking dish and top with panko bread crumb. Broil or bake until the top is golden brown and Enjoy!
