There are so many varieties of curry and I gotta thank my latest mango craze, I’ve been eating at least one a day, which inspired this dish.

1 ½ cupChickpeas
1 ½ cupMango
pureed
¼ cupcoconut milk
1white onion
medium, diced
1 knobGinger
minced
Fresh Basil
for topping, optional

Instructions
Step 1
Over medium heat, add avocado oil to skillet. Cook onions, ginger and habanero pepper until fragrant— about 5 minutes.
Step 2
Add spices and mix well, cover skillet with lid and allow flavors to marry for 3-4 minutes.
Step 3
Add chickpeas and mix well. Next include the mango puree. Continue cooking for an additional 1 - 2 minutes.
Step 4
Turn stove off, allow curry to cool down for 5 minutes, it should be thick when it cools a bit, then mix in the coconut milk.
Step 5
Serve with fresh basil on top. Can be paired with quinoa, wild rice, flatbread, naan, etc. Enjoy
