Dice onions and celery, very small. Set aside on a large bowl. Add the other half of the onion and the ends of the celery to a pot.

Add 1 medium sized chicken breast to the pot with the celery and onion. Top with water and boil until chicken reaches 165°. Set aside to cool. You may optionally add seasonings to this to create a yummy broth. For this recipe, I like to add Italian seasonings and 1 low-sodium chicken bouillon cube.

Quarter washed grapes and chop the pecans. Add to the veggie mix in step one. Place bowl in the fridge until chicken is ready to shred.

Shred the chicken breast with 2 forks. Once shredded, place in the fridge for about 15 minutes to ensure it it completely cooled.

Add cooled, shredded chicken, Greek yogurt, garlic powder, salt, and pepper to the veggie bowl. Stir well.

Will keep well for 4 days in the fridge in an airtight container. Greek yogurt tends to separate, so make sure to stir the salad well before serving each time.
