Chicken in Italian Cheese Sauce

Chicken breast simmered in a creamy Italian cheese sauce. The whole family will love it and it takes under 30 minutes to prepare!

Chicken
Step 1
Take 4 chicken breasts and pat both sides dry
Step 2
Season both sides of the chicken breasts with paprika, salt, pepper, garlic powder & Italian seasoning (season with your heart!)
Step 3
Melt 2 tablespoons of butter in your cast iron skillet. Mince 5 cloves of garlic and add to your hot cast iron. Sauté for about 1-2 minutes before adding your chicken
Step 4
Add your chicken to your cast iron skillet on medium-high heat for about 5-6 minutes on each side. Add more butter to the pan about half way through to ensure your chicken stays juicy!
Step 5
Remove your chicken from your pan but leave all of the drippings in the pan. Take about 1/4 cup of chicken broth to deglaze all of the seasonings from the bottom of the pan

Reduce your heat to a low-medium setting. Melt approximately 2 tablespoons of butter in your skillet. Slowly whisk half n half into your drippings until it covers the bottom of the pan. Add about 1/3 cup of Italian blend cheese (again, I measure with my heart) and 1/2 block of cream cheese. As the cheese melts mix half n half in slowly until it comes to a creamy consistency. Almost like the consistency of a cheese sauce for Mac & cheese!
Step 7
Allow the cheese sauce to combine and season (with your heart, of course) with Italian seasoning, garlic powder, onion powder, salt, pepper, and red chili flakes. Once the seasoning is combined, add the chicken back into the pan
Step 8
Adjust your heat to low and allow the chicken to simmer in the sauce for about 5 minutes. Top with parsley for color & serve!
