I have to admit, I was never a huge fan of salads until just a few years ago. They never felt satisfying enough to take for lunch or eat as a quick dinner, and I was always left wanting something more. If you’re anything like I was, I’m confident this salad will flip the switch for you. It’s savory, sweet, crunchy, and tangy all in one, with an amazing creamy peanut dressing.

2 cupspurple cabbage

Instructions
Step 1
1. Cook the quinoa according to the package directions. Set aside and allow to cool.
2. Combine the quinoa with all the remaining ingredients, except the dressing, in a large serving bowl and toss. Drizzle the peanut dressing over the top when ready to serve
