Instructions

Step 1
1. Warm pan on burner 2. In a medium bowl, mash the banana. Add the applesauce, egg, and vanilla, if using, and stir until well combied. 3. Add the flour, baking soda and cinnamon to a separate bowl and whisk together. Add the wet ingredients to the dry and stir until the batter is just combined. It'll be thick. 4. Add 1/4 cup pancake batter to form each pancake into a rough circle. You should be able to fit 3 to 4 pancakes at a time. 5. Cook the pancakes for 5 to 6 minutes, until the underside is lightly browned. Flip and cook an additional 2 to 3 minutes. 6. Serve immediately with berry or fruit puree. Store in an airtight container in the refrigerator for 3 to 5 days or in the freezer for 4 to 6 months.
