Instructions

Step 1
I like to start off by making the sauce with this one. Heat up some oil in a large saucepan and place the onions, carrots, garlic and ginger in for a few minutes to soften before adding your tumeric and curry
Step 2
Don't let the spices burn. Keep stirring and then add the flour and mix well for another few minutes.
Step 3
Add your chicken stock and bring to a simmer. 5 or so minutes before adding your coconut milk, soy and brown sugar. Mix well and let it simmer for 5-7 minutes.
Step 4
Either blend with a hand blender to remove the solids or pour through a sieve until the solids are gone. Taste to check if it needs salt or pepper at this stage.
Step 5
In a separate pan toast chilli flakes, sriracha and Tabasco for a few mins but don't let it burn. Add it to the sauce and that's the sauce complete.
Step 6
Get the station going with seasoned flour then eggs then panko breadcrumbs with paprika, chilli flakes and garlic powder. Butterfly the chicken and cover it with greaseproof and batter it until it's flat before putting it through the work station. This makes it easy to shallow fry.
Step 7
Shallow fry until golden brown and place into the oven for 5-10 mins to ensure its cooked through depending on the size of the chicken breast. At this point heat up the sauce again and prepare the rice and any sides
