Homemade Cauliflower Gnocchi

This is such a good recipe! Basic ingredients and rewarding.
I recommend these sauces with it: pesto, marinara, cheese sauce or something simple like what I did.
Note: As the servings decrease, so does the cook and prep time

Instructions
Step 1
chop the cauliflower into smallish pieces and boil them for 15 minutes. Once cooked, let dry in a towel for as long as possible.
Step 2
Use a good processor to blend the cauliflower in small portions (will have to be spread over 5-6 blends to make sure not too much cauliflower is added to the blender at once)
Step 3
once a portion has been finely processed, take a tea towel and wrap the cauliflower in it. Use the towel to squeeze as much moisture as possible out if the cauliflower.
Step 4
Add the cauliflower to a bowl with 1 1/2 cups of flower and add more if needed. Crank the salt on top of the mixture and give it a good lot of mixes
Step 5
Take the batter in approximately 4" balls and roll it out into snake like strips on a table, each around 1/3 inch in diameter. Repeat until batter is finished.
Step 6
Using a butter knife, cut the strips of batter into gnocchi pieces that are around 1/2-1 inch in length.
Step 7
To sauté (this is what I did): heat a frying pan on low heat with vegetable oil or olive oil. once warm, toss in as many gnocchi as will cover the bottom, make sure they are not stacked on top of each other. fry the gnocchi on two opposite sides, each till slightly brown. then make room for the next batch.
Step 8
To bake: put the gnocchi in the oven at 350 f for 15-30 minutes (honestly idk lol)
Step 9
To boil: this will make them slightly wetter and so maybe make sure the mixture isn't too wet, but boil the gnocchi for 3-4 minutes till warm
For Optional Topping

cover the tomatoes in 1 tbsp olive oil, garlic and vinegar if wanted and roast in the oven for 30 minutes. meanwhile, fry the spinach until cooked. When the tomatoes are ready, combine the basil, spinach, tomatoes, parmesan, 3 tbsp olive oil salt and pepper with gnocchi and serve
