Instructions
Step 1
Put eggs, sweetener and salt in a large bowl. Use a mixer to batter the ingredients until the eggs become bubbling

Add milk and then gradually add flour, continuing to mix it with a whisk to avoid clumping

Put a pan on a hight-heated hob

Add oil and boiling water to the batter. Mix well with a mixer. The batter should be quite leaky

Pour ~1/2 cup of the batter into the heated pan and spread it all over with circling movements. The blin should begin to cover with little bubbles in 10-15 seconds. If bubbles do not appear, add some more boiling water. Cook for 1-1.5 minutes until the edges become golden brown. Then flip the blin over and cook it for 30 more seconds.
Step 6
You can also add boiling water later in case the batter thickens or cools.
Step 7
Top blinis with butter if you like. Serve with sour cream, condensed milk, jam or honey
