Ingredients

30 ounceschickpeas
banzo beans, rinsed and drained
1red bell pepper
medium, chopped
1 ½ cupsfresh flat-leaf parsley
chopped
½ cupred onion
chopped
½ cupcelery
chopped, plus leaves, about 1 small cucumber sliced
3 tablespoonsextra virgin olive oil
3 tablespoonslemon juice
from 1 to 1 1/2 lemons
2 clovesgarlic
pressed or minced
½ teaspoonkosher salt
½ teaspoonblack pepper
freshly ground
cherry tomatoes
Instructions
Step 1
1. In a large bowl, add the chickpeas, bell pepper, parsley, red onion, and celery , cherry tomatoes and cucumber
Step 2
2. In a small bowl, whisk together the olive oil, lemon juice and garlic, and season to taste with the kosher salt and freshly ground black pepper. Add the dressing to the chickpea mixture and toss to coat.
Step 3
3. Serve immediately or chill up to 4 days. Before serving, add more salt and pepper to taste.
