Instructions

Step 1
Wash and cut the eggplant into pieces;
Step 2
Add some salt and marinate for 15 minutes;
Step 3
For the sauce: Add minced garlic, chilli flakes, sugar, soy sauce, corn starch, and water in a bowl, then mix them well;
Step 4
When 15 minutes are up, use your hand to squeeze the eggplant as hard as possible (for getting rid of the water);
Step 5
Add cooking oil in a pan, stir fry the eggplant with medium heat for 10 minutes until eggplants are soft;
Step 6
Add the sauce mixture;
Step 7
Wait for a few minutes until they’re not watery;
Step 8
Add green onions, coriander, and sesame oil to taste :)
