Apple Crisp Caramel Macchiato

Step 1
In a small to medium saucepan, combine the apple cider, sugar and/or cinnamon sticks if using. Bring the mixture to low-medium heat and simmer for about 30 mins, until reduced to about a third of the original volume. It will thicken as it cools, so don’t over-reduce. I was left with about 2/3 cup of syrup. Set aside.
Step 2
While that is cooking, make the caramel sauce too. Pour coconut milk, sugar, maple syrup and salt into a heavy bottomed saucepan. Bring to a boil over medium heat and let boil softly for about 5 mins. Stir every few mins with a heat proof spatula to keep the bubbles down. Turn heat down to a simmer and let it cook for 30-35 more mins until thick and coating the back of a spoon. Stir occasionally, scraping the bits at the bottom of the pan. Remove from heat and stir in oil and vanilla extract. set aside as it’ll continue to thicken.
Step 3
Add a few tbsp of apple syrup into a glass depending on sweetness preference. I like doing about 1.5 tbsp. Add lots of ice, choice of milk, several tbsp of layered caramel sauce and your 2 shots of espresso. Stir it up and enjoy!
