Instructions

Step 1
In a medium sized sauce pan, heat frozen berries and about a tablespoon of water over medium heat.

Bring berries to a simmer and add sugar. Mix well.
Step 3
Add in cornstarch and continuously mix until thick. Remove from heat and set aside.
Step 4
Measure out the amount of jam needed (there may be extra depending on the berries used) and place in a large mixing bowl.

Add oil and sugar. Mix well.
Step 6
Add beaten egg and vanilla. Mix only until incorporated.
Step 7
In a separate bowl, whisk together flour, powder and salt.

Add flour mixture to the jam bowl in 3 parts. Mixing only until slightly incorporated for the first 2 additions. Mix until fully incorporated for the last. Do not overmix.
Step 9
Cover bowl and place in the fridge for 4 hours. Do not skip this step.
Step 10
Preheat oven to 350 degrees.
Step 11
Place powdered sugar in a small bowl. Grab a fork so you can re-fluff as needed.

Portion out the 12 dough balls with a cookie scoop or spoon. Dropping them one at a time into the powdered sugar to coat.

Place on a lined cookie sheet and bake for 8-10 minutes.

Let cool on the pan for at least 5 minutes before transferring to a cooling rack.
