1 tspminced garlic
1 tspmayonnaise
1 tspsugar
½ tspgreen onions
chopped
1 Tbspegg

Instructions
Step 1
Crack and whisk an egg well in a mixing bowl. Transfer the egg mixture to another bowl, leaving about 1 tbsp of egg in the original bowl. Add sugar and yeast to the 1 tbsp of egg and whisk well.
Step 2
Add the bread flour, salt, and warm milk and mix well. Knead the dough by hand until it becomes sticky and let sit for 10 minutes.
Step 3
Add room temperature butter to the dough and knead more, making the dough smooth. It should take about 5 minutes. Fold the dough inside itself to make it round and flip upside down.
Step 4
Place the dough on a pan with a baking sheet and ferment at 30°C (86°F) for 1 hour.
Step 5
For the garlic sauce, add minced garlic, room temperature butter, egg, sugar, mayonnaise, and green onions to a mixing bowl and mix well.
Step 6
Return to the dough and press it gently to let the gas out. Using a knife, carve a checkerboard pattern into the surface of the flattened dough. Apply the garlic sauce all over the top of the dough, including the sides. Redraw the lines in the dough to keep them visible.
Step 7
Add mozzarella cheese into the carved portions of the dough. If shredded cheese is used, squeeze them into little blocks and press into the lines. Do this until all the gaps are filled.
Step 8
Bake in an oven at 350°F for 15 minutes, or until dough begins to brown.
