Berry bruschetta

This is a great recipe to make when you have lots of berries to use up. It’s also a balanced and delicious dessert for children (and adults too!). EASY TIP Vanilla-flavoured soya yogurt is available in large supermarkets, and it gives a sweet contrast to the lemon-infused berries. If you don’t have any available, stir ¼ teaspoon good-quality vanilla extract into the yogurt, or use coconut yogurt.

Instructions

Step 1
1 Add the berries to a bowl and squeeze over the lemon juice. Stir through and allow to stand while you prepare the toasts.
Step 2
2 Heat a griddle (grill) pan over a medium-high heat, then add the baguette slices. Toast for 2–3 minutes on each side, until grill lines appear.
Step 3
3 Remove from the griddle pan and smooth over 1 teaspoon yogurt per toast. Drizzle each with a little maple syrup, then load on the lemon-infused berries. Serve immediately.
