Ingredients

200 gramsPasta
uncooked, gluten-free
500 gramsbroccoli
⅓ cupbreadcrumbs
gluten-free
90 gramshalloumi
2 tablespoonsolive oil
500 gramsvegetarian mince
1 tablespoonminced garlic
2zucchini
chopped
600 gramsgrape tomatoes
chopped
1 ½ tablespoonsvegetable stock powder
gluten-free
½ cupwater
cold
1lemon
zest and juice of
25 gramsVegan Parmesan
finely grated
Instructions
Step 1
Cook pasta in boiling water for 10 - 12 minutes until only just cooked, drain and set aside.
Step 2
Cook broccoli in boiling water for 3 minutes, drain and return to pan along with the pasta.
Step 3
Preheat oven to 180 C and toast bread crumbs until golden.
Step 4
Heat a non stick pan and cook halloumi until crispy, chop halloumi into small pieces and set aside.
Step 5
Mix stock with water.
Step 6
In same pan add olive oil and cook mince and garlic until mince is cooked then add, zucchini, tomatoes and made up stock. Bring to a simmer, add lemon juice, reduce heat and cook uncovered for 10 minutes or until mixture has thickened and stirring occasionally.
Step 7
Combine bread crumbs, prosciutto, lemon zest, and Parmesan in a bowl.
Step 8
Add mince and vegetable mixture to pasta broccoli and gently mix together, sprinkle over with Parmesan bread crumb mixture and evenly mix through.
